I spend a lot of time wishing I liked certain things—coffee, cool indie music, quinoa, shopping at bargain stores, and  most recently, oatmeal. I’m constantly reading articles about how great oatmeal is, why I should be eating it every day, and how fun it can be. But I’ve never liked it, for some reason. I’m going to go ahead and blame myself and my lackluster preparation skills, because I can’t think that so many people love oatmeal but I don’t. Also it just looks yummy…all warm and mushy.

You should also know that I’m obsessed with Chocolate Covered Katie and her healthy vegan desserts blog —more on her in a later post. But she, like every other sensible vegan, loves oatmeal, and has a ton of really neat oatmeal recipes, one of which I decided to try this weekend.

I made Peanut Butter Breakfast Pudding, which, of course, ended up being delicious. Better yet, it was super healthy! If you decide to make it yourself, which you should, you should know that it definitely makes a hearty, whole bowl full. I was only able to eat about half of it, but that’s because I had been snacking off and on all evening.

A bizarre thought that I had when I was eating it was that it would be an awesome breakfast for my as yet hypothetical children, rather than sugary cereals. I will say that for me, it was a little weird because it was warm but had the “pudding” consistency…and I think next time I make it, I’ll let it cool a little bit. That’s just a personal preference thing, though. I might also toss in some raisins, just for good measure. Raisins are always a good thing—they’re just grapes and sunshine, after all!
